It's because what lies beyond there still hasn't reached us due to the limitation of the speed of light. The universe is about 15,7 billion years old. If we'd look further, there's no matery or light, merely an infinite black hole. But there's an energy expansion which last since the big bang so further in the cosmic time we'll be in able to observe the further outer limits.
