Yes , if they want to . They dont have to break into the server with hack tricks wich would be easy for them , they can just watch the trafic in and out = from you to the server and from the server to the recipient .
There is no privacy in the net , and no hiding yourself . ( unless you use a laptop with a mac changer through a new wifi net every time ) . If they want to know they will find out . Its a matter of how much they want to know as to how far they go to find out .

Anyone can do it, in theory!
The fact is just that they can't and are never allowed to do so.
Sniffing traffic from the net is THE SAME as listening to other phone conversations. It is forbidden, and it will not hold up in court unless they got the go ahead from some1 who is authorized to let them do it.
Another example:
They can for example inject a site with some blind sql, and figure out how the database looks by just looking at the responses from the sql queries / injections, and from there dump the database onto the screen, copy it, save it, and import into the same management system psychonaut uses.
Then they can write a script that displays everything they want from this site.
But usually, cops are too dumb for that. They just can't do it.
They are not computer experts!
Also, this is not always possible!
One must have good protection then they can keep out feds
A good programmer / hacker with knowledge can keep pretty much anyone out
Also, one CAN easily hide from cops on the net
hide behind good proxy's and they just can't trace back to you.

You are talking about Mr.plod the local bobby . I did say its a mater of who wants to know and how much they want to know . It is posible and is done . Its also legal . In Germany the police can give themselves permision to do it . The laws that have been made across europe say it and prove it .

Those things are irelevant if they are watching your internet conection or the internet conection of the people you are comunicating with . At least 500000000 internet conections are monitored 24 hours a day . There is an israeli security firm that watches the whole internet but the analysys of the data is done on a key word and phrase basis + wich sites one visits .
