    if you cut the stems you avoid damaging the delecate hyphae. the fruiting body is formed where hyphae of two organisims meet/cross. cutting the mushroom allows another fruiting budy to develop from the same hyphae ie. if you cut it you will get more mushrooms growing in the same spot
